We take pride in our coffee, and roast our beans to provide you a cup like none other. We search for the best greens, ones with flavor profiles you may not expect, and rigorously test our roasts to perfection.

Our team is always looking for the best beans, trying new blends and broadening our horizons with unique processes. We start with tried-and-true roasting curves, but always trust our noses to fine tune and explore the notes that come out with each coffee. Only then do these beans make their way to the customer. Sometimes only a few degrees are the difference between a good cup of coffee and a great one!

All of our beans are 100% air roasted. Also called fluid-bed roasting, this process uses hot air for convection heating rather than a hot conductive metal drum to roast the beans. Think of it like air popping popcorn, where the kernels are able to cook evenly as the air distributes them. This roasting method is precise, which leads to a more consistent roast and a smoother, less acidic cup of coffee. It also helps us to create distinct roasting profiles for each of our beans, and is even more sustainable, as we eliminate the need for gas in the roast process.

Roasting happens at least twice a week to ensure freshness for our subscribers and customers in our drink lab, and we test (aka drink) lots of our own coffee to keep it up to our standards.
